SEMI-AUTOMATIC COMPUTER SYSTEM FOR COAGULATION OF MILK IN THE DEVELOPMENT OF FARMER CHEESE

Small cheese-producing companies belonging to CONALAC (Cooperativa Nariñense de Lácteos) have similar char-acteristics in terms of managing the equip-ment and following the procedure to make cheese. For this reason, they all have the same problems in the milk coagulation process.The person who is in charge of doing the part of this process does not measure the PH level of milk to get an exact proportion of liquid rennet, using a simple and rudi-mentary way to do this work and putting the rennet liquid in some containers to mix the ingredient without an exact measur-ing and without taking into account the appropriate temperature to get a better production of curd as well as the produc-tion of cheese.In this way, the procedure does not ac-complish with the purposes, for instance milk acidity, control of liquid rennet per each litre of milk and the exact tempera-ture to obtain a high production.System developed allows to identify the amount of milk, measuring the tempera-ture in a digital way and checking the exis-tence of rennet; besides, it makes control operations such as activate and defuse the heater to monitor the temperature and motor turn control in order to homog-enize the mixture of rennet in the milk. It also shows the events and the state of the process in a LCD screen. Software system building for receiving information for each clotting process, allows the user to query, stats and production reports.
